I have heard it from all over the place that overnight oats are great but never tried it...until last night.
I grabbed a container and filled it with yummie ingredients and set it in the fridge.
Ingredients:
1/2 cup rolled oat
1/2 cup apple sauce
2 teaspoon chia seeds
1/2 cup almond milk
1-2 teaspoon cinnamon
Extra: fresh blueberries when eating it the next morning
Directions:
Layer the ingredients in a container that has a lid...shake so everything combines and set it in the fridge. The next morning you can enjoy with fresh fruit on top if it, it is great served cold and a bit different than the usual oatmeal routine! Great with blueberries!!!
Éjszakára beáztatott zabkása?! Sokaktól hallottam már és most megerősítem, hogy nagyon finom.
Hozzávalók:
1/2 csésze zab
1/2 csésze almaszósz
2 kiskanál chia mag
1/2 csésze mandula tej
1-2 kiskanál fahéj
Extra: friss áfonya reggel a tetejére szórva
Elkészítés:
A hozzávalókat rétegezzük egy tároló edénybe aminek van teteje, rázzuk össze és tegyük a hűtőbe éjszakára. Másnap reggel vegyük ki, rakjunk rá friss gyümölcsöt és már lehet is fogyasztani.

Energy bar / Energia szelet
I wanted to make energy bars for the week ahead, so I can grab something after work before spin class or if I just need the extra energy by the end of the day. The recipe is not really a recipe, I went by my instincts, and put everything in without measuring, so you can have as much fun with it as you would like...the overall outcome will be the same.
Ingredients:
10 pieces of Medjool dates (pitted)
1 handful mixed nuts (pumpkin seed, walnuts, almonds...)
1 handful cashues
1 handful dried cranberries
2 tablespoon raw cocoa powder
1 tablespoon almond butter
Directions:
Put all the nuts and dried fruits into a food processor and blend, until no big chunks of nuts are seen. Add cocoa powder to it, blend more...this should make is moist and should form a ball like cookie dough. At this point I found that my mixture is too dry so I added the almond butter. When done, put the mixture on a piece of cling wrap and form a rectangular shape. Put it in the fridge for a couple of hours and then unwrap and cut into cubes or bars. Store it in the fridge, it should be fine for a week or even longer.
Nyers energia szelet munka után, edzés előtt?!...A tökéletes energia forrás, hogy túléljem a napot, de ne legyek annyira tele, hogy ne tudjak edzést tartani vagy futni egyet a nap végén. A recept nem igazi recept, teljesen szabadon lehet játszani a hozzávalókkal, az eredmény tuti biztos, hogy jó lesz. Nem méricskéltem semmit, csak marok számra raktam hozzá a jobbnál jobb magokat és aszalt gyümölcsöket amit itthon találtam.
Hozzávalók:
10 szem aszalt datolya (magozva)
1 maréknyi mag keverék (mandula, tökmag, dió...)
1 maréknyi kesudió
1 maréknyi aszalt vörösáfonya
2 evőkanál natúr kakaópor
1 evőkanál mandulavaj
Elkészítés:
A magokat és aszalt gyümölcsöket tegyük aprító gépbe és aprítsuk addig, amíg a nagyobb diófélék egész aprók nem lesznek. Adjuk hozzá a kakaóport, ettől nedvesebb állaga lesz és összeáll a tészta. Ennél a pontnál én kicsit száraznak éreztem még a keveréket, ezért adtam hozzá a mandulavajat. Ezzel együtt már tökéletes lett. Vegyük ki a gépből, egy darab fóliára terítsük ki és téglalapot formázva rakjuk a hűtőbe pár órára. Ezt követően fel lehet vágni szeletekre vagy kisebb kockákra, ahogy tetszik, és már kész is.

Sült cékla és répa / Beet and carrot bake
Alábbi már tényleg a pofon egyszerű kategória, de szerintem annál finomabb. A cékla adta az ötletet, amit a minap vettem frissen, ehhez már csak répa kellett, hagyma, sajt, fűszerek és 45 perc előkészület. Tökéletes köretnek, vagy magában is egy könnyű ebéd vagy vacsora lehet az egyben sült cékla és répa.
Hozzávalók:
3 fej cékla
5-6 répa
6-7 szál újhagyma (vagy 1 póréhagyma)
3 gerezd fokhagyma
Oliva olaj
Egy maréknyi reszelt sajt (mozzarella, trapista...)
Zsemlemorzsa
Szója szósz, só, bors
Elkészítés:
Mossuk meg a céklát jó alaposan, zöldség kefével ledörzsölve a földet róla. Vágjuk le a szárát és tegyük egy lábosba kevés vizzel a cékla fejeket. Pároljuk, amíg megpuhul fedő alatt, ez 15 perc kb. Villával lehet közben ellenőrízni, hogy mennyire puha a cékla, ha elfőtte a vizet akkor még lehet adni hozzá.
Egy serpenyőbe melegítsünk oliva olajat, és adjuk hozzá az aprított fokhagymát és a karikázott újhagymát. Ezt pároljuk pár percig majd mehet rá a hasábokra felvágott répa egy kevés sóval és borssal, és az egészet pároljuk, süssük amíg puha nem lesz a répa, de ne legyen túlfőzve. Közben el kell készülnie a céklának is. Vegyük ki a lábosból és vágjuk szeletekre, cikkekre. Egy tűzálló edénybe rétegezzük a céklát és a répát, majd locsoljuk meg egy kevés szója szósszal, a tetejét pedig hintsük meg sajttal és zsemlemorzsával, ami ropogós kérget fog eredményezni. Tegyük a sütőbe és csak addig süssük, amig a sajt megpirul, én grill funkción magas hőfokon 5-6 percig hagytam pirulni és már kész is volt. Jóétvágyat!
This dish could not be any easier, but in my opinion it tasted great. I bought beets yesterday and wanted to bake it somehow for lunch, so all I needed were carrots, scallions, spices, some cheese and 45 minutes of preparation. It is a perfect side dish to go with any meat or fish but you can enjoy by itself as a light lunch or dinner as well.
Ingredients:
3 large beets
5-6 carrots
6-7 scallions (or 1 leek)
3 cloves garlic
Olive oil
Handful or grated cheese (mozzarella...)
Panko bread crumbs
Soy sauce, salt, pepper
Directions:
Start by washing the beets, so all the dirt is scrubbed off them. Cut the stems off and put the beets in a saucepan with some water. Steam for about 15 minutes, until they cook and become soft. You can check with a fork and add more water if needed. Cover with a lid while steaming. In a skillet, heat some olive oil and add the minced garlic and chopped scallions to it. Heat for a minute and then you can add the carrots that should be cut into smaller pieces. Add some salt and pepper and cook until the carrots are done, but not too soft. The beets should be done by now as well, so you can take them out and cut into slices or wedges. Layer the vegetables in a baking dish, drizzle with a little bit of soy sauce and cover the top with a mixture of grated cheese and bread crumbs which will form a nice crunchy top.
Put it in the oven, and broil at high temperature for a couple of minutes until the cheese turns a nice golden color. Easy as that, the dish is done, enjoy!

Butternut squash muffins
I had to do something with the leftover baked butternut squash from the spaghetti I made yesterday. So instantly I was thinking of something sweet, but made it healthier using oat flour, almond milk and coconut oil instead of the usual ingredients of muffins...
Ingredients:
Muffin:
3/4 cup flour
1/3 cup oat flour (make your own by blending rolled oats to a fine powder)
1/2 tablespoon baking power
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg (if you do not have all these spices separate, you can use all spice mix, gingerbread spice, or pumpkin spice even)
1/4 cup coconut oil
1/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup butternut squash (baked in advance, smashes)
1/3 cup almond milk
Handful of walnuts
Cream cheese glaze:
4 oz cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
3-4 tablespoon almond milk
Directions:
I had leftover baked butternut squash slices, but if you are starting from scratch, do so by baking butternut squash in the oven until soft, so you can mash it or chop it up finely for the muffin dough.
Preheat the oven to 375 degrees while you prepare the muffin. In a bowl combine all dry ingredients:
flour, oat flour, baking powder, - soda, salt, cinnamon, ginger and nutmeg.
In another bowl, beat the sugar with coconut oil and vanilla extract, until it becomes a creamy texture. Add in the mashed butternut squash. Start adding the flour mixture with the milk, by little doses until all is mixed together. The last step is to stir in the walnuts finely chopped up in advance, and then the dough is done. Line the muffin tin with paper cups or spray with butter so it does not stick and fill the holes up to 3/4 with the mixture. I ended up with 9 muffins, the normal sized ones.
Put it in the oven and bake for about 25 minutes. Until these are baking, you can mix up the cream cheese glaze which will go on top of the muffins. Beat cream cheese until smooth and then add the sugar and vanilla. Stir in milk, 1 tablespoon at a time until you get the right consistency. Take the done muffins out of the oven, let it sit and cool for half an hour and then drizzle with the cream cheese glaze.
I sprinkled some almond slices for decoration and the extra chruch to top everthing off and then you are ready to enjoy this yummie spicy muffin with the cream cheese glaze that complements the flavors great.

Butternut squash spaghetti / Sütőtökből spagetti
I have spiralized zucchini before and made pasta, which was great, so I though to experiment with butternut squash as well. The finish product was a colorful, light lunch. I bet I will start making spiral spaghetti out of everything now...
Ingredients:
1 butternut squash
1 sweet potato
2-3 cloves garlic
1/4 yellow onion
1 big tomato
2 cups kale
Olive oil
Parmesan cheese
Directions:
Start by peeling the sweet potato and dice it to small pieces. In a small skillet, heat olive oil and roast the sweet potato. While that is cooking, prepare the "spaghetti". Cut off the big bulby part of the butternut squash (where the seeds are, and set it aside, I baked that later just in the oven at 400 degrees for snack) and chop the other part of it into smaller pieces. Peal it and spiralize it with the spiralizer especially made for making spaghetti out of vegetables.
Chop up the onion and garlic and add to a skillet with olive oil. Heat for a minute and then add the butternut squash spirals. It takes a couple of minutes to cook, but don't over do it, because the "pasta" will become mushy and loose it's shape. Dice the tomato and kale as well to relaitvely small pieces and add to the cooking butternut squash. Combine it and then at the end, you can add the sweet potato which should be caramellized to a nice golden color by now. Easy as that, it is ready. You can sprinkle with some grated parmesan or the cheese of your choice and enjoy.
A spirálozó konyha gép egy fantasztikus találmány. Cukkiniből már csináltam spagettit, ma pedig sütőtökkel kísérleteztem. A végeredmény egy különleges, színes, könnyű ebéd lett. Már előre látom, hogy mostantól minden zöldségből spirál spagettit fogok gyártani...
Hozzávalók:
1 sütőtök
1 édes burgonya
2-3 gerezd fokhagyma
1/4 vörös hagyma
1 nagy paradicsom
2 maréknyi madár saláta vagy rukkola
Oliva olaj
Parmezán sajt
Elkészítés:
Kezdjük az édes burgonyával. Ezt meg kell pucolni, felvágni kis kockákra (nehezebb vágni mint egy hagyományos krumplit, ha még nem használtuk ne lepődjünk meg) és egy kis serpenyőben oliva olajon arany barnára sütni. Már ennek az illata fantasztikus lesz. Amíg ez készül, meg lehet csinálni a "spagettit". Vágjuk le a sütőtök szélesebb végét (ahol a magok vannak és tegyük félre, én ezt egyszerűen megsütöttem később nasinak) és szeljük cikkekre a keskeny részét. Hámozzuk meg és a spirálozó szerkezetet használva készítsük el a tésztát.
Aprítsuk fel a hagymát, fokhagymát és oliva olajon pároljuk egy nagy serpenyőben pár percig. Erre jöhet a mostmár spagetti formájú sütőtők. Pár percig pároljuk, de ne legyen túl puha, mert akkor a sütőtök püré állagú lesz, és nem lesz semmi köze a tésztához.
